BBQ Chicken Nachos

I figured I better get in as many BBQ recipes as I could while we still live in Kansas City. So here comes another! I must say I was a little worried how this one would turn out, but I think it was a great experiment. Let me know what you think! I will post updates as I modify the recipe.

BBQ Chicken Nachos
Serves 2
Calories: ~450

1 chicken breast
BBQ seasoning
Garlic powder
Ground Cayenne Red Pepper
~4 T. BBQ sauce
1/2 yellow onion chopped
1/2 tomato chopped
tortilla chips (2 servings)
1/2 c. shredded cheese
salsa

Defrost chicken and season with spices. I used BBQ seasoning, a little garlic powder and a quick dash of cayenne pepper. Cook the chicken, again we used our trusty George Foreman.


Cut the chicken. Put BBQ sauce into a bowl and add the chicken. Stir the chicken with the BBQ sauce until it is well coated-you may have extra which is good, just add it to top your nachos later.


Chop the onion and tomatoes. I used a yellow onion because they just had a sale for a whole bag for $0.99 so that's what I have on hand. Lay the chips onto the plates. Top with BBQ chicken. (Add a little BBQ sauce if you wish!) Next top with the onion, tomatoes and cheese. I forgot to defrost our cheese so I melted each plate in the microwave for 45 seconds. (I liked it that way best anyways!)


Top with salsa and enjoy! We were a little short on ingredients this practice round. Hopefully I can make more adjustments in the future. But for now, the recipe worked just great for us, especially for a relaxing Saturday night. Let me know if you have any suggestions!! Happy cooking!

Ode to Jade

We spent the last weekend in Nebraska cheering the Vikings on at state volleyball. I tried to take a few pictures on my phone during the game. Some of them aren't the best, but here is a super special post-my Ode to Jade!! (And I threw in a couple of Miss Atlee as well!)

Week Happenings: 11/9/13

Not nearly as much happened this week for us as last week, but here are my thoughts on the week.

First of all a BIG, HUGE CONGRATULATIONS to my sister and the Bertrand Viking volleyball team. They just finished a perfect regular and post-season. They head to state next week. We are very excited to go watch. We only made it to one regular season game :(...Luckily they FINALLY got the #1 seed which means they play Thursday night instead of in the morning aka-we can be there! Sounds like district finals was awesome! I listened on the radio. It was pretty comical listening to someone else's thoughts on the game. I kinda enjoyed it, but the real thing will be MUCH better next week.

I am stuck in class all weekend, but it has been pretty interesting. We did sneak away last night and went to the movie: About Time. If you haven't seen it yet, I HIGHLY recommend it.



I am a huge fan of Rachel McAdams and a sucker for romantic comedies. My oh my, this was not what I was expecting. I thought it would be similar to Time Traveler's Wife... I laughed...I cried...I loved it!! It was SSSOOOO much better than I was anticipating. So go see it, you'll love it. Here's the trailer if you're interested.

Another week of school is in the books. Only a few more left-can't hardly wait! I'm loving this fall weather. The trees are beautiful, and it makes for a pretty incredible drive to and from class. Thanks for stopping by :)
