Grilled Skillet Burritos



I pulled out one of my Southern Living cookbooks and found this delicious recipe. Also it was unbelievably simple!

What you need:

2 cups chopped cooked chicken breast
1 (15 oz.) can black beans, drained and rinsed
1 (15 oz.) can of corn
1 cup cheddar cheese
creamy cilantro-jalapeno sauce (see below)
8 tortillas
salsa

What you do:

1. Toss together first four ingredients and 1/2 cup Creamy Cilantro-Jalapeno Sauce. Spread 3/4 cup chicken mixture just below center of each tortilla. Fold opposite sides of tortillas over filling, and roll up. 
2. Coat hot griddle or skillet with cooking spray. Cook burritos, in bathes, on hot griddle over medium heat, pressing gently with a spatula, 3 to 4 minutes on each side or until golden brown and cheese is melted. Serve with salsa and remaining Creamy Cilantro-Jalapeno Sauce.

Creamy Cilantro-Jalapeno Sauce

1 cup light sour cream
1/2 cup loosely packed cilantro leaves, chopped
2 T. diced (pickled) jalapeno peppers
2 t. chopped yellow onion
2 t. Dijon mustard
1 t. lime zest

1. Stir together all the ingredients in a small bowl. Cover and chill 30 minutes. Store in an airtight container up to two days.

Makes 8 servings.

Month of Projects

October is flying by! We have had a busy month of completing more projects. Matt worked hard to refinish our security door. It had rusted quite a bit on the bottom.


We also had some paint left over from our other projects. Our entry table had some paint that was chipping so we also refinished this. 


I found a cute tutorial for making pinata pumpkins! The link is HERE in case you want to make some for yourself!!


A couple Saturdays ago we were out for a little workout and found this park with a huge area for flying RC planes. Matt was in heaven!!! We went back again this past weekend to watch some more people out flying. Matt has continued to ask to go back there four or five times.


One of my clients gave me a pumpkin carving kit so we got our pumpkins and got to decorating!


Here are our finished creations! I forgot to take an after picture of our door, but you can catch a little of Matt's handiwork! :)




I also found a project to do with some of my older kids. I practiced them first on my own, and here is the finished product. We also picked up an extra little table which now sits by our kitchen.


Sunday we set out for our first hike of the season. It was so nice to get back out there! 


We headed up our favorite spot, South Mountain. 



As the rest of the country heads inside, the Phoenicians are ready to spend more time outside.

New project and a Husker game

Hey guys! Many of you may have seen Matt and I recently refinished a dresser to turn into our TV stand. I thought I would post a few of our progress shots. Here is our "before" as well as how we transported it. Totally embarrassing, I know. And these people we bought it from did not live THAT close to us...


We got to work right away. We decided to use the night stand as practice. 


Once we felt comfortable with that we tackled the big dresser.


Here is our finished night stand! It was so much fun!! Right now, it is sitting in our living room. We are not sure where we will put it or what we should do with it.


And here is our finished TV stand! It's so fun to add new things to our home.


 We went home a couple weekends ago. As usual, it went so fast! We did go to a Husker game which was lots of fun! Also apparently that was the only place I took pictures...We had not been to a game since before they finished the new addition on the stadium. 


Matt was invited to a tailgate at the college of business so we hit that up before the game. We stepped into the stadium right in time for the tunnel walk.


Out seats were awesome!



GO BIG RED! We ended up going with my youngest sister, Atlee, and best friend, Angela. I think we all had a great time!

We ran into a good amount of people that we knew including our friend, Scott, who is now a police officer! :)


During halftime, Matt felt he needed to get a closer look at the band! ;) Just kidding, he was waiting to talk to a friend!




It was so much fun seeing as many friends as we could!


The weather is kind of cooling off here. We tried getting in the pool today, but I think I may be finished for the season. Now it's time for us to head outside and enjoy the weather!! Hope you all enjoyed your weekend.

Happy Fall!

I hope you are all getting to experience some fall weather. We have had a few days below 100 degrees so we are getting ready to start spending time outside again! Fall is sought out for here in Arizona as it leads to more manageable temperatures. With fall comes football. I delved into fantasy football this season by joining two leagues!! My first team started off really well on Thursday night thanks to Tom Brady, but it looks like I am going to lose that game. Maybe my other team will have more luck...
One of my co-workers texted me Friday morning this link. She told me to go check it out if I had time. Well Matt and I made time to explore the Healing Field in honor of September 11th. It was incredibly humbling.


There was a flag and information regarding every person that lost their life that day.


We have almost lived in our house for one year. I decided it was time to add a few decorations. I think I finally found some greenery I liked to add to our kitchen.


I have been wanting to redo an old dresser to sit below our TV stand. We set out on our journey this weekend. We found one that also came with a night stand we decided would be perfect to practice on. We did a little research and got to work! Here it is following sanding and hammering.


And here is our (nearly) finished product!



Now that we have enough confidence in what we are doing, we are moving onto the dresser!
I also put out our fall decorations. It was so fun, but it went too fast! I wish I could decorate our house every day, but then I would probably not enjoy it as much.

Labor Day

Hope you all had a wonderful Labor Day weekend! I hope you all relaxed a little bit with some friends and/or family. We began our weekend with Husker football. Matt was watching College Game Day and saw an add for free Pizza Hut pizza. We were all over that! We tried the new sauce they put over the top. Have you guys tried it? It was awesome!


We headed to Old Town Scottsdale to a Husker bar to watch the game. It was exciting!...Well until the last second of course...but that's okay.


On Labor Day we took off and completed the Apache Trail.We were planning on doing a hike so this was a little bit of a different change of pace for us. We drove past Superstition Mountain and were reminiscing about the time we hiked that whole thing. It was pre-blog, but it may be something I should write up. It was intense! 


We drove along the Apache Trail, finding many photo ops!





We drove past Canyon Lake. It looked very fun!


The lake didn't seem too busy. I think we may have to try that out next time!



We stopped at the town of Tortilla Flat and did a little window shopping.



We continued on our drive.



This is where it got really exciting! :)


We followed a dirt road the rest of the way. Some parts were very steep and others were very curvy.

We stopped to eat our lunch along Roosevelt Lake.


It was very fun to take another little day trip. We are finally getting some temperatures under 100 which are making me VERY excited to go outside again. Enjoy the rest of your short week!
