Breakfast Skillet

We enjoy this breakfast most weekend mornings as of late. This is an easy recipe to substitute other items if you are missing something or want to try something else.

 Here's what you need:

2-3 large potatoes
1 pound breakfast sausage
3 eggs
1/2 cup green peppers
1/2 cup spinach
olive oil
coconut oil
cheese
salsa
milk
salt and pepper
onion powder
ground turmeric

Here's what you do:

Begin by washing and dicing your potatoes. Turn on your burners and begin melting your coconut oil (or whatever you choose to cook your potatoes in). Cook potatoes in first skillet. I like to season mine with salt, pepper, and ground turmeric.
Brown your choice of breakfast sausage in separate skillet.
Once sausage is browned, set aside in bowl covered with tin foil to keep warm. Next scramble your eggs. I like to add about 1/3 cup of milk to keep my eggs nice and fluffy. I also added salt, pepper, and onion powder.
Once your potatoes and eggs are cooked, add eggs, sausage and vegetables to potato skillet. Cook about five minutes or until vegetables have softened. Top with cheese or salsa as desired.
Matt also likes to turn his into breakfast burritos. Feel free to fill tortillas with these as well. He also warms them in the skillet to make them a little bit crispier.
We have also used other peppers in our skillet and gone without the spinach. I think grape tomatoes would also be a great add in! This is very simple and easy to change up as needed. We have made this without potatoes for a little less carbs. You could easily try bacon or ham instead or even go meatless. Enjoy your new breakfast skillet!

Nearly twice baked potatoes

Matt has discovered his love of crockpots. He can put our food in it before he leaves for work, and I usually get home in time to turn it off. It doesn't get much easier! This recipe involved more work on the back end than the front end, but either way it is still pretty simple! So if you need to get out the door quickly in the morning, this recipe is for you!

Here's what you need:
4 medium russet potatoes
Optional: 10 oz. cremini mushrooms
1 c. broccoli
1/3 c. vegetable or chicken broth
2/3 c. low-fat plain yogurt

Here's what you do:
Wash and clean each potato. Wrap each potato in tin foil and place into crockpot on low setting for 6-8 hours.

Once the potatoes are soft scoop everything out of the skins.

Mix scooped out potatoes with chicken broth and yogurt (and mushrooms if you are adding those). Fill skins with new potato mixture. Cook broccoli how you wish and add to top.

Garnish with your favorite toppings-cheese, bacon bits, etc. And done! You could also very easily add meat to your potato mixture if you choose. Another Tasty Tuesday for you to try.

For your bonus recipe this week I must share these with you.

Super Potatoes

Hi friends! We had a busy weekend, and I spent most of yesterday getting things back on track. I created this recipe when we had some leftovers to use up. Our potatoes were almost done for so I decided we needed to use a lot of them, fast!

Here's what you need:
4 potatoes
~3 T. olive oil
seasoned salt
~1 c. shredded chicken (or whatever leftover meat you have, pork works well too! I bet ground beef would also be good.)
~2 cups cheese

Here's what you do:
Preheat oven to 425°. Grease 9 x 13 pan or cookie sheet. I put aluminum foil down and spray it with Pam-it makes clean up a breeze! Slice potatoes thinly into chips. The thinner you slice them, the faster they will cook. Arrange potatoes onto pan. Drizzle olive oil onto potatoes. Cover potatoes with seasoned salt as desired. Bake for 25-30 minutes or until potatoes begin to feel soft and are easily cut. Remove from oven and add shredded chicken. Cover with cheese. Bake an additional 10 minutes or until cheese melts.

Enjoy as a meal on its own or pair it with another fruit or veggie! Another super simple Tasty Tuesday recipe for you. We love it for an easy weekend meal. Join me tomorrow as I tell you all about our whirlwind weekend! See you then :)
