Honey BBQ Garlic Lime Chicken

Here is another twist on a slow cooker chicken recipe. I bet you will never guess what is in it! I was really original in coming up with the title...

Here's what you need:
Approximately one pound of frozen chicken breasts
2 T. ketchup
4 T. BBQ sauce
2 T. honey
1 big T. minced garlic
2 T. lime juice
Optional: 1/2 c. chicken broth

Here's what you do:
Place chicken into crockpot. Mix together ketchup, BBQ sauce, honey, garlic, and lime juice. Pour mixture over chicken.

Pour chicken broth over chicken. (I added it this time because we had some sitting in the fridge. You could add this to any slow cooker chicken recipe I have. If you don't have it, I'm sure it will be fine without!) Cook on low for 6-8 hours or 3-4 hours on high.

Serve and enjoy! We also topped the chicken with a little extra honey for some added flavor. The first night we ate it with some noodles. The second time we had it with rice and broccoli. Both options were great!

For your bonus recipe this week I have another main dish for you I found from Shay. I made this Sausage and Corn Chowder last week.

Yes, I know it is still 100°+ degrees here, but it is September so I thought it was okay. I thought it would last us two meals, but it did not at all. We loved it!!! Try it for yourselves! We have already had it twice and will definitely be having it more this fall and winter. Have a great day friends!

Nearly twice baked potatoes

Matt has discovered his love of crockpots. He can put our food in it before he leaves for work, and I usually get home in time to turn it off. It doesn't get much easier! This recipe involved more work on the back end than the front end, but either way it is still pretty simple! So if you need to get out the door quickly in the morning, this recipe is for you!

Here's what you need:
4 medium russet potatoes
Optional: 10 oz. cremini mushrooms
1 c. broccoli
1/3 c. vegetable or chicken broth
2/3 c. low-fat plain yogurt

Here's what you do:
Wash and clean each potato. Wrap each potato in tin foil and place into crockpot on low setting for 6-8 hours.

Once the potatoes are soft scoop everything out of the skins.

Mix scooped out potatoes with chicken broth and yogurt (and mushrooms if you are adding those). Fill skins with new potato mixture. Cook broccoli how you wish and add to top.

Garnish with your favorite toppings-cheese, bacon bits, etc. And done! You could also very easily add meat to your potato mixture if you choose. Another Tasty Tuesday for you to try.

For your bonus recipe this week I must share these with you.

S'mores cookies!!!! They are SSSOOOOO good! And super simple! And the best part, you can make as many or as few as you want! They area great afternoon snack! Again these come from my favorite blogger, mix and match mama. You can find the recipe here. I also have it saved under Great Recipes on my Pinterest page. Enjoy!!!

Honey Sesame Chicken

Hello friends! Another Tasty Tuesday coming your way. I found this recipe and it sounded really good. I adapted it, and this is what I came up with. It is basically another spin-off on my crockpot chicken recipes. If you would like to see the original recipe click HERE. It looked very tasty also!

Here's what you need:
~1 lb frozen chicken
1/3 c. honey
1/4 c. ketchup
1/4 c. sugar
2 T. vinegar
2 T. soy sauce
sesame seeds to garnish
Optional: green onions for garnish
*Tip: I also made another batch of sauce to pour over the chicken just before serving. Use the following measurements for every two servings:
3 T. honey
2 T. ketchup
2 T. sugar
1 T. vinegar
1 T. soy sauce

Here's what you do:
Place chicken in crockpot on low setting. Mix together all other ingredients except the sesame seeds and green onion. Pour over chicken.

Let cook 6-8 hours on low or 3-4 on high. Apply extra sauce and garnish when ready to eat! I served mine with rice and green beans. WHAT!?!?! I know. I know. I know. I have ALWAYS hated green beans, but not if they are straight out the the garden which these were or looked like they were. So that is good enough for me! The chicken had a really good flavor and made awesome leftovers for wraps and such.

In addition...

HOLY MOLY!!!! I found this recipe again from my new favorite blogger mix and match mama. She calls them cinnamon rolls with 2 frostings. I call them heaven!

They were SSOOO easy, and they taste like they came from a bakery. We enjoyed them for a Sunday breakfast, but I am sure they would be amazing any time of day. They also made great leftovers slightly warmed in the microwave. Enjoy, friends!

Sweet Pineapple Chicken

Hi there! Here is another simple recipe coming your way.

Here's what you need:
~2 lbs chicken cut into 1" diced chunks
1 cup pineapple juice (I bought a can of pineapple slices to use for another recipe I will share later and used the juice from that. It gave us just about the right amount.)
1/2 c. brown sugar
1/3 c. soy sauce

Here's what you do:

I defrosted chicken breasts and cut into ~1" cubes. You can also save this step by buying chicken chunks. We always only buy chicken breasts therefore it took me a few extra minutes to do this today. Either way, place the cubed chicken into your crockpot.

In a separate bowl, stir together the remaining three ingredients.

Once the brown sugar has dissolved, pour over chicken.

Cook on low for 6-8 hours or high for 3-4 hours.

We paired ours with stir fry veggies and brown rice. Another easy weeknight meal for you!

Recipe:
~2 lbs chicken cut into 1" diced chunks
1 cup pineapple juice
1/2 c. brown sugar
1/3 c. soy sauce

I defrosted chicken breasts and cut into ~1" cubes. You can also save this step by buying chicken chunks. We just always only buy chicken breasts therefore it took me a few extra minutes to do this today, but oh well. Place your cubed chicken into your crockpot.
In a separate bowl, stir together the remaining three ingredients. Once the brown sugar has dissolved, pour over chicken. Cook on low for 6-8 hours or high for 3-4 hours.

And for your added bonus, check out what I have been eating for lunch EVERYDAY this week!! If you know me at all, you know I hate to eat the same thing multiple days in a row. However, I have eaten this salad everyday. I used to make a similar pasta salad, but I saw it had bacon in it so I thought "Why not give it a try? Bacon makes everything better." And it is so true! Try it out for yourselves (I went without the green onions.) You won't be sorry. Happy Thursday!
